    Today I have a strawberry crunch recipe that takes the outside of the ice cream bar and allows you to use it in a variety of ways! 

    If you want a homemade version of that elusive Good Humor Strawberry Shortcake bar, sprinkle the small crumbles over some vanilla ice cream. And the best part is it is a fraction of the cost!

    Whether it's for a special occasion or just on top of your favorite ice cream, this crunchy topping is a fun and easy treat. It's definitely not just a summer dessert.

    My favorite way to enjoy this quick homemade strawberry crumble recipe is on this decadent Strawberry Shortcake Crumb Cake.

    You'll need the following simple ingredients to make strawberry shortcake crumble topping.

    Golden Oreos, butter and freeze-dried strawberries in three glass bowls.

    Freeze-dried strawberries are fabulous for this because of the concentrated flavor that they give.

    Golden Oreos give both a crunchy crumble as well as a creamy texture.

    Unsalted butter is what holds the crumble together.

    Substitutions

    • Strawberry Jello Powder can be a substitute for the freeze-dried strawberries. The strawberry crunch topping will be sweeter with the strawberry gelatin mix.
    • You can use shortbread cookies in place of Golden Oreo cookies.
    • For a different flavor, try another freeze-dried fruit.

    Put the freeze-dried strawberries and the Golden Oreos into the food processor. Use the pulse setting until you have large crumbs. Continue to pulse as you pour in the melted butter.

    If you want smaller pieces, use more pulses on your food processor. For larger pieces pulse less.

    Serve on ice cream, cake, yogurt or more!

    • If you don't have a food processor, break the Oreos into coarse crumbs by putting them in a plastic baggie and breaking them with a rolling pin or meat mallet.

    • Strawberry Shortcake Ice Cream Crumbs: This is delicious on top of ice cream! Try strawberry ice cream or your favorite flavor.
    • Cake: I use these strawberry crunch crumbles on top of Strawberry Shortcake Crumble Cake. It would also be delicious as a strawberry cake topping.     • Storage: Store this strawberry shortcake crumble in an airtight container for one week at room temperature, up 3 months in your refrigerator or freezer. 
    • Freezing: To freeze it, store it in an airtight container or freezer bag for up to 3 months. When you're ready to use it, allow it to thaw first uncovered. 
    • After long-term storage, add the strawberry shortcake crunch in an even layer to a rimmed baking sheet covered with a piece of parchment paper. Bake the strawberry crunch at 325 degrees Fahrenheit for 5-8 minutes to bring back the crunchiness of the topping.

    • 36 Oreos Golden Oreos (1 regular 14.3 oz package -NOT family size)
    • 5 tablespoons unsalted butter (melted)

    • Add the freeze dried strawberries and Golden Oreos to a food processor. Use the pulse setting to break up it up into large crumbs.
    • Add the melted butter slowly as you continue to pulse 3-4 more times.

      I halved the recipe because I didn't want to make so much. It surprised me how much this tastes like the strawberry shortcake ice cream bars. I added some to vanilla ice cream. I'm going to try it on yogurt too. Great recipe.
