Place 1 pizza pan in the oven and preheat the oven to 500 °F.
Cut ½ of pear into slices, almost paper thin, and coat with sugar in a small bowl.
Mince 1-2 cloves of garlic, or set aside 1 teaspoon of pre-minced garlic.
Cut a few thin slices of purple onion and chop 1 tablespoon shelled pistachios. Hang onto even the tiniest crumb!
On a lightly floured sheet of parchment paper, roll out pizza dough into a 13" circle.
Gently rub minced garlic around the surface of the dough.
Drizzle 1 tablespoon olive oil onto dough and spread evenly with a pastry brush.
Sprinkle shredded mozzarella around the entire pizza, extending to the edges.
Distribute the fresh mozzarella pearls evenly around the entire pizza and sprinkle on the shaved parmesan.
Add prosciutto and pears to the pizza, making sure to place them strategically enough that you'll get a taste of both in each slice.
Tear basil leaves to release flavor, and tuck them around prosciutto and pears.
Top with a few thin slices of purple onion and sprinkle with chopped pistachios.
Use a pizza peel or second pizza pan to carefully slide the parchment paper with pizza on top in the oven to cook for 8-10 minutes.

Tips and Tricks:
Thinly slicing pears and onions will allow you to heavily distribute the ingredients throughout the pizza, maintaining a delicate balance of flavor in each bite!
To promote even cooking, we like to place a 13" pizza pan in the oven during preheat and then roll the pizza dough and prepare the pizza on a sheet of parchment paper. When it's ready to cook, slide a cool pizza pan under the parchment paper. Use the cool pizza pan to easily slide the parchment paper/pizza into the oven and onto the hot pan.
Substitutions/Adjustments:We highly recommend this pizza as-is, but it can be altered based on personal preference and availability of ingredients. Here are some ideas:
Meat: Prosciutto could be substituted for a thinly sliced Capocollo or Pancetta.
Cheese: Mozarella pearls could be substituted for burrata.
Fruit: Don't have pears on hand and still want to try it? Thinly sliced sugar coated apples or halved blackberries may work well!
Meat lovers - double up on the meat!
Kid friendly - try half without prosciutto and/or onions.
