Pizzeria Limone's Pera Pizza is so good, we had to recreate it at home! The Pera has fun ingredients and bright flavors. It balances the saltiness of prosciutto with the sweetness of sugar-coated pears and creamy mozzarella. It's topped with fresh basil, thin slices of purple onion, and a crunch of pistachios for good measure.

In-house, this pizza is made on an extra thin crust in a piping hot pizza oven, but it tastes great with our Chewy Pizza Crust Recipe too! Each of these recipes make just enough for two 14" pizzas.
In our kitchen, we like to throw together a pepperoni pizza for the kids and a Pera for the grown-ups (plus the tween daughter), but after trying this recipe, we won't be surprised if you decide to double up on Pera's instead!

You'll need the following ingredients to make Pera Pizza with Prosciutto and Pistachios.
Olive Oil and Minced Garlic are the base to this pizza. They're a subtle combo that let the rest of the ingredients shine.

It is traditionally thinly sliced, and often used on charcuterie boards (pairing coming soon) but we think the thinner the better when it comes to using it on the Pera. This will allow you to distribute more throughout the pizza without overpowering the other ingredients.
Pears are the star of the show on this pizza. They're subtle and a bit unexpected, but hold their own (especially when sugar coated) and contribute in both flavor and texture to making this pizza special!
Basil adds freshness to these great ingredients.
Pistachios are creamy and earthy. They soften a bit on the pizza when cooked, making them even more buttery.
How to Make It
Here are some quick visual instructions. The full recipe with ingredient measurements is below!
Gently rub minced garlic around the dough's surface and drizzle with olive oil. Spread oil around evenly with the back of a spoon, your hands, or a pastry brush.
Sprinkle shredded mozzarella around the entire pizza, extending to the edges, and distribute fresh mozzarella pearls throughout the entire pizza. Sprinkle with shaved parmesan.
Distribute prosciutto throughout the pizza, making sure that it's placed stragegically enough for each slice to get a piece.
The pears are layered next to and around the prosciutto. You won't want to skip their sugar coating though!
The basil gets torn and tucked around pears and prosciutto, and then we're on to the finishing touches!
Top with a few thinly sliced purple onions, shredded parmigiano reggiano, and chopped pistachios.

- Thinly slicing pears and onions will allow you to heavily distribute the ingredients throughout the pizza, maintaining a delicate balance of flavor in each bite!
- To promote even cooking, we like to place a 13" pizza pan in the oven during preheat and then roll the pizza dough and prepare the pizza on a sheet of parchment paper.. When it's ready to cook, slide a cool pizza pan under the parchment paper. Use the cool pizza pan to easily slide the parchment paper/pizza into the oven and onto the hot pan.
Storage and Reheating
- Storage: We doubt you'll have leftovers, but if you do, store them in a sealed Ziplock bag in the refrigerator.
- Reheating: A microwave or oven will do the trick, but our favorite way to reheat pizza is in the air fryer!

Pera Pizza with Prosciutto and Pistachios
Equipment
- 2 13" pizza pans
Ingredients
- 1 batch Pizza Dough
- 1 teaspoon minced garlic
- 1 tablespoon olive oil
- 2 cups mozzarella
- ¼ cup shredded parmesan
- ¼ cup mozzarella pearls
- 1 tablespoon shredded parmigiano reggiano
- ½ green pear, thinly sliced
- ½ cup prosciutto
- 4 large basil leaves
- 1 tablespoon chopped pistachios
Instructions
- Place 1 pizza pan in the oven and preheat the oven to 500 °F.
- Cut ½ of pear into slices, almost paper thin, and coat with sugar in a small bowl.
- Mince 1-2 cloves of garlic, or set aside 1 teaspoon of pre-minced garlic.
- Cut a few thin slices of purple onion and chop 1 tablespoon shelled pistachios. Hang onto even the tiniest crumb!
- On a lightly floured sheet of parchment paper, roll out pizza dough into a 13" circle.
- Gently rub minced garlic around the surface of the dough.
- Drizzle 1 tablespoon olive oil onto dough and spread evenly with a pastry brush.
- Sprinkle shredded mozzarella around the entire pizza, extending to the edges.
- Distribute the fresh mozzarella pearls evenly around the entire pizza and sprinkle on the shaved parmesan.
- Add prosciutto and pears to the pizza, making sure to place them strategically enough that you'll get a taste of both in each slice.
- Tear basil leaves to release flavor, and tuck them around prosciutto and pears.
- Top with a few thin slices of purple onion and sprinkle with chopped pistachios.
