Instructions
Oat Flour Donuts
Preheat the oven to 350° F. Grease the donut pans with cooking spray or a little oil on a brush. (If using 1 pan you will have to bake them in two batches).
Mix the oat flour, baking powder, and salt in a bowl.
In a separate bowl add the milk, egg, sugar, vanilla, and oil and mix well.
Add the dry ingredients to the wet ingredients and mix them together.
Carefully spoon or use a pastry bag to fill the donut pan ¾ full.
Bake for 9-10 minutes. You can check with a toothpick to see if the center is done baking.
Allow them to fully cool before adding icing.
Vanilla Icing
Gently melt the butter so that it is just barely melted.
Mix the powdered sugar, vanilla, 2 teaspoons of milk together in a small bowl and add the melted butter. Add an additional teaspoon of milk if you need to thin the icing.
Easter Toppings
Bunny Donut: Dip the donut in the vanilla icing. Add sprinkles and gently set a marshmallow bunny in the center of the donut hole.
Nest Donut: Dip the donut in the vanilla icing. Sprinkle the coconut on the top and gently press 2 mini Cadbury eggs onto the side of the donut.
Chocolate Candy Donut: Use a knife tocarefully chop up a few different colors of the Cadbury mini eggs. Dip the donut in the vanilla icing. Add the broken chocolate egg pieces on top of the donut.
Notes
Tips:
Mix the icing right before you are ready to begin frosting the donuts. The icing will begin to set in the bowl if left too long.
Add the sprinkles and/or coconut before the icing hardens on the donut to make sure it sticks well.
Let the donut cool completely before adding the icing.
Storage: The donuts can be stored in an air-tight container for 4 days. However, the color from the bunny and eggs may start to rub off on the frosting.
