Mix the water, yeast, sugar, salt, and bread flour (wait to add the last 1/2 cup).
Check the dough. If it is sticky add the last 1/2 cup of flour and knead.
Add the dough to a large bowl and cover it with plastic wrap. Let it double in size. Divide the dough into 8 equal portions.

Let the bagels rest on a floured surface. While you boil a pot of water. They should puff just slightly.
Boil the bagels for 30 seconds on each side.
Add the dried onion flakes and bake until they are very golden brown!
