NEW YORK STYLE SOURDOUGH DISCARD BAGELS

Chewy New York Style Bagels are even better when made with a sourdough starter. The discard adds depth of flavor and keeps the bagels fresh longer!

INGREDIENTS

Mix the ingredients together except the last 1/2 cup of flour. After it has come together feel the dough. If it is sticky add the last 1/2 cup.

Knead the dough in the mixer. Shape it into a ball.

Place the bagel dough in a large bowl and cover it with plastic wrap. Let it rise until doubled.

Let the bagels rest on a floured surface while you fill a pot with water and sugar and bring it to a boil.

Boil the bagels and add the toppings as soon as they are pulled out of the water. Bake them on parchment paper.
