Measure out two cups of rolled oats into a blender or food processor.

We experimented with different kinds of appliances and found that a high-powered blender, such as the Vitamix, creates the finest, fluffiest oat flour.

Combine oat flour, baking powder, sugar, and salt in a bowl.

Pour apple cider vinegar into the cup of milk and let sit for 5 minutes to let sour.
In a large bowl, whisk eggs, oil, and milk until well combined.

Pour the oat flour mixture into a bowl of liquid ingredients and mix well.

The batter should be thin enough to pour, but thick enough that the pancake doesn't spread and flatten quickly on the pan. Add 1 tablespoon of milk at a time as needed to thin the batter, or oat flour in small amounts until desired consistency is reached.
Your batter may even thicken as it sits, so don't be surprised if it needs a little more milk added along the way.

Melt a small amount of butter onto a griddle or large pan. Once the pancake starts to bubble on the outer edges, it's time to flip!

Let the pancake rise and remove from the pan when it is cooked through.

- Have you ever traveled and wondered why your pancake batter isn't the same as it is at home? The consistency of batter may change based on elevation and humidity. Batter should be thick enough not to spread and flatten when scooped onto hot pan, but thin enough not to mound. Add 1 tablespoon of milk at a time if as needed to thin the batter, or add oat flour in small amounts until desired consistency is reached. Don't be surprised if it needs to be adjusted a bit throughout the cooking process.

Oat Flour Pancakes
Equipment
- 1 Vitamix Blender Or other high powered blender
- 1 Whisk
Ingredients
- 2 ½ cups Oats (gluten free if needed)
- 2 tablespoons Sugar
- 2 teaspoons Baking Powder
- ¼ teaspoon Salt
- 2 large Eggs
- 1 cup Whole Milk
- 1 teaspoon Apple Cider Vinegar
- 1 tablespoon Oil (canola, vegetable, or avocado oil work great!)
Instructions
- Measure out 2 cups oat flour into high powered blender. Start at low speed and increase slowly, blending for one minute.
