Instructions

Delicious.. and similar to how we had it in Japan with one exception. In an Osakan ramen shop we encountered "chedaramen", pronounced ched-ah-ramen, where they incorporate cheddar cheese powder into the broth. It didn't come out stringy like normal cheese and provided a rich flavor to the broth base. It was instantly our go-to favorite the few times we went there to have ramen for a comfort food, as we were traveling in the off season to save money; though that meant a few rainy days off and on. Some Japanese cuisine use gouda cheese in Tonkatsu (pork broth) ramen. In the absence of powder cheeses, one could simply substitute powdered parmesan cheese?

So interesting Curt! I think that cheddar cheese powder would be a great way to make this quickly. However, it may be difficult to find in most local grocery stores. Finely grated parmesan cheese would be a different flavor, and I don't think it will dissolve the same way as cheddar cheese powder. However, I'm sure the flavor would be good. I love parmesan.
